Dehydrated sourdough starter instructions

Three days from dried starter to a lively little culture ready for your baking adventures.

Day 1

Rehydrate

Mix 20g dehydrated starter with 40g water. Cover lightly and wait about two hours. Add 20g flour, mix, and leave overnight—about 12 hours. It should look and feel like pancake batter.

Day 2

Feed

Add 60g flour and 60g water. Mix well, cover lightly, and let it sit overnight.

Day 3

Build strength

In the extra container, mix 50g water with 50g rehydrated starter. Clean the main jar, return the mixture, then stir in 50g flour. Let it sit lightly covered for at least four hours. It should double and show big bubbles.

Never pour discarded starter down the sink. It can set like cement. Wipe it into compost or garbage instead.

Continue feeding equal parts starter, water, and flour by weight. Wanda’s usual ratio is 1:1:1—for example, 100g starter + 100g water + 100g flour.
