Dehydrated Sourdough Instructions
Equipment and ingredients required:
- Clear glass jar or plastic container at least 500ml with lid
- an extra jar/container to help with feeding your starter
- Kitchen scale
- All Purpose flour
- Filtered water
Instructions:
Day 1:
Mix 20g dehydrated starter with 40g water
Lightly cover with lid.
Let sit until rehydrated about 2 hrs
Add 20g flour, mix and let sit overnight, about 12 hrs
It should have the consistency and look of pancake batter
Day 2:
Add 60g flour, 60g water, mix and let sit overnight
Lightly cover with lid.
Day 3:
Now we will use the extra container.
Put your empty container on scale, add 50g water and 50g of the rehydrated starter.
Discard the extra starter, I use a paper towel and add it to my compost bin. DO NOT put down your sink, especially if you have a big amount of it, it is like cement and will cause problems.
After you have cleaned out your “main” jar/container, add the water and starter back to it and then add the 50g of flour. Stir well until all the flour is incorporated.
Let sit at least 4hrs lightly covered with lid. It should double in volume and have some nice big bubbles.
You can now “feed” your starter again, using equal parts starter, water and flour. I use the same method, with an extra container.
My usual feeding ratio is 1:1:1 , for example, 100g starter : 100g flour : 100g water.
There are many websites with instructions on how to rehydrate the starter.
Here are a couple you can look to for help as well.
